Seafood and Pesto Pie
with DOLMIO Creamy Tomato & Pesto

Creamy Tomato & Pesto
200 g Baby Sweetcorn, Cut To 1 Cm Lengths
200 g Broccoli, Small Florets
250 ml Cream
1,500 g Mashed Potato With Butter Added
800 g Monkfish Or Cod, ( Boneless & Skinless Weight ) Cut Into 2 Cm Chunks
800 g DOLMIO Creamy Tomato & Pesto
Method
Steam or blanch the broccoli and sweetcorn for about 1 minute and drain.
Fry the fish gently in a little butter.
Add the DOLMIO® Creamy Tomato & Pesto Sauce, parsley, cream and vegetables and mix gently.
Heat through.
Place into individual, or one large, ovenproof dish and pipe the potato on the top.
Bake until lightly golden brown for about 15-20 minutes.
